Eggs Stuffed with Smoked Lountza / PP PADERIS’ Smoked Lountza

INGREDIENTS:
- 8 eggs
- 1 potato
- 200 g mayonnaise
- 1 small onion, finely chopped
- 150 g smoked lountza, diced
- Salt, to taste
- A few fresh rosemary leaves
- Freshly ground hot red pepper, to taste
METHOD:
Boil the eggs: Place the eggs in a small saucepan, cover with water, and boil over medium heat for 10 minutes.
Boil the potato: In a separate pot with salted water, boil the potato for about 25 minutes until soft.
Prepare the eggs: Remove the eggs from the heat, peel them, cut them in half, and place them on a platter. Scoop out the yolks.
Prepare the potato: Drain the potato, peel it, and cut it into small cubes.
Make the filling: In a blender, combine the egg yolks and mayonnaise. Blend for 1-2 minutes until smooth.
Transfer the mixture to a bowl and add the potato, chopped onion, diced lountza, and salt. Mix well to combine.
Assemble: Spoon the mixture into the egg whites, sprinkle with fresh rosemary and freshly ground hot red pepper, and serve.
