Stuffed Sweet Potatoes with Spicy Sausage / Gourmet / PP PADERIS Spicy Kostas’ Sausages

INGREDIENTS:

  • 4 sweet potatoes, baked at 175°C
  • 280g spicy sausage, chopped
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 cups peppered Kefalotyri cheese, grated
  • 1/4 cup fresh spring onion, chopped
  • Black pepper, freshly ground
  • 1/4 cup coriander, chopped

METHOD:

Preheat the oven to 220°C.
In a large pan, add the spicy sausage, onion, and garlic, and cook over medium heat for 7-8 minutes, until the sausage is cooked through. Break up the sausage with a wooden spoon during cooking.

Cut the sweet potatoes in half lengthwise and scoop out the flesh with a spoon, leaving a little around the edges to maintain their shape.

Place the sweet potato flesh in a large bowl and mash it.

Once the sausage is cooked, remove it from the pan with a slotted spoon and add it to the bowl along with the spring onion, black pepper, and 1 cup of peppered Kefalotyri cheese.
Mix the ingredients together with the mashed sweet potato and fill the sweet potato skins with the mixture.

Top with the remaining cheese and bake in the oven for 20 minutes.
Garnish with coriander and serve.
