Baked Mashed Potatoes with Minced Meat and Smoked Pancetta
Ingredients:
- 4 tablespoons olive oil
- 6 spring onions, thinly sliced
- ½ cup breadcrumbs for the mince mixture + ½ cup breadcrumbs for sprinkling
- 300g ground beef
- 200g smoked pancetta, finely chopped
- 1 large carrot, diced
- 200g chopped tomatoes
- 1 cup beef stock
- Salt
- Pepper
- 4 cups mashed potatoes
- ½ cup grated graviera cheese
Method:
In a shallow saucepan, heat the olive oil and sauté the spring onions until golden.
Add the breadcrumbs and toast them with the onions.
Incorporate the ground beef, smoked pancetta, carrot, chopped tomatoes, beef stock, salt, and pepper. Cook over low heat for 15-20 minutes.
Preheat the oven to 180°C.
Evenly spread the meat mixture into an ovenproof dish.
Using a piping bag, pipe the mashed potatoes over the meat mixture, covering it entirely.
Combine the remaining breadcrumbs with the grated graviera cheese and sprinkle over the mashed potatoes.
Bake in the oven at 180°C for 20 minutes, until the top is golden brown.
