Green Salad with Smoked Duck, Mango & Gooseberries By Chef Konstantinos Koveos
Ingredients
- Leafy green vegetables
- ½ smoked duck breast Paderis
- ½ mango, diced
- 50g gooseberries
- Parmesan flakes
- Freshly ground black pepper
For the Dressing
- 1 tbsp mustard
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tbsp sunflower oil
- 2 tbsp olive oil
- Salt & pepper
- Fresh thyme
Method
Start by making the dressing: add all ingredients into a blender and mix well until emulsified. Keep it in the fridge until ready to use.
In a large bowl, combine the leafy greens and fruits. Drizzle with the dressing, toss gently, and transfer to individual serving bowls.
Add Parmesan flakes and thinly sliced smoked duck on top. Finish with freshly ground black pepper.
