Soup with Pasta, Sausages and Beans
Ingredients:
- Olive oil
- 2 Karamanlidika sausages, sliced
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- 1 red bell pepper, finely chopped
- 2 cups water
- 1 cup fusilli or other short pasta of your choice
- 400g canned chopped tomatoes
- 3 cups chicken broth
- 1 teaspoon dried oregano
- Salt
- Freshly ground black pepper
- 2 cups cooked red beans
- Grated Parmesan cheese, for garnish
Method:
In a large pot, heat a little olive oil over medium heat and sauté the sausages until browned.
Add the onion, garlic, and bell pepper, and cook for 2-3 minutes until softened.
Pour in the water, pasta, tomatoes, chicken broth, oregano, and season with salt and pepper. Continue cooking.
Once the mixture begins to boil, reduce the heat and simmer for 15 minutes until the pasta is tender.
Add the beans and cook the soup for an additional 3-5 minutes. If the soup is too thick, thin it with a little water, extra broth, or tomato.
Sprinkle with grated Parmesan cheese and serve the soup hot.
