Spicy Chickpeas with Country Style Sausages / PP PADERIS’ COUNTRY STYLE TZOUMAGIAS SAUSAGES / GOURMET
Ingredients:
- 4 tablespoons extra virgin olive oil
- 1 onion, finely chopped
- 1-2 garlic cloves, finely chopped
- 250g Country Style Tzoumagias sausage, chopped
- 400g chickpeas
- 230g red hot chili peppers, chopped
- 6 small sweet peppers, roasted and chopped
- 1 teaspoon sherry vinegar
- Salt
- Freshly ground black pepper
- Fresh parsley, chopped, for garnish
- Extra virgin olive oil, for garnish
Method:
Soak the chickpeas overnight for at least 12 hours to soften them slightly.
Drain and boil the chickpeas for approximately 1 hour until tender.
In a large, deep frying pan, heat the olive oil over medium heat.
Add the onion and garlic, cooking and stirring occasionally until the onion becomes translucent.
Add the Tzoumagias sausage and continue cooking until it browns.
Transfer the sausage mixture to a bowl and mix it with the cooked chickpeas and peppers.
Add the sherry vinegar and season with salt and freshly ground black pepper.
Garnish with chopped parsley, drizzle with a little olive oil, and serve.
