{"id":2445,"date":"2025-01-30T09:59:12","date_gmt":"2025-01-30T09:59:12","guid":{"rendered":"https:\/\/paderis.gr\/?p=2445"},"modified":"2025-05-29T08:34:57","modified_gmt":"2025-05-29T06:34:57","slug":"kayteri-loykanikopita-tp-panteri-loykanika-choriatika-karditsas","status":"publish","type":"post","link":"https:\/\/www.paderis.gr\/en\/spicy-sausage-pie-pp-paderis-country-style-karditsa-sausages\/","title":{"rendered":"Spicy Sausage Pie \/ PP PADERIS\u2019 Country Style Karditsa Sausages"},"content":{"rendered":"<p>TIME: 85min<br \/>\nSERVINGS: 1 medium baking dish<br \/>\nDIFFICULTY: 3<\/p>\n<p>INGREDIENTS:<\/p>\n<p><u>For the pastry:<\/u><\/p>\n<ul>\n<li>200g strong flour<\/li>\n<li>\u00bc tsp salt<\/li>\n<li>100g cold butter, cubed<\/li>\n<li>2 egg yolks, beaten<\/li>\n<\/ul>\n<p><u>For the filling:<\/u><\/p>\n<ul>\n<li>3 tbsp olive oil<\/li>\n<li>2 large onions, sliced<\/li>\n<li>1 Florina pepper, sliced<\/li>\n<li>1 hot chilli pepper, finely chopped (or a pinch of spicy boukovo flakes)<\/li>\n<li>1 garlic clove, finely chopped<\/li>\n<li>\u00bd bunch parsley, finely chopped<\/li>\n<li>2 large traditional Karditsa sausages, chopped into small pieces<\/li>\n<li>Salt, to taste<\/li>\n<li>Freshly ground black pepper<\/li>\n<\/ul>\n<p>METHOD:<\/p>\n<p><u>For the pastry:<\/u><\/p>\n<p>Sift the flour into a bowl, add the salt, and mix.<\/p>\n<p>Add the cold butter cubes and rub them into the flour with your fingertips until the mixture resembles coarse crumbs.<\/p>\n<p>Add the beaten egg yolks, keeping a small amount aside for glazing.<\/p>\n<p>Knead the mixture gently until it forms a smooth dough.<\/p>\n<p>Wrap the dough in cling film and refrigerate for a short while.<\/p>\n<p><u>For the filling:<\/u><\/p>\n<p>Heat the olive oil in a large frying pan and saut\u00e9 the onions.<\/p>\n<p>Add the Florina pepper, hot chilli pepper, and garlic, continuing to saut\u00e9 for 5 minutes.<\/p>\n<p>Stir in the parsley, salt, freshly ground black pepper, and sausage pieces. Remove from the heat.<\/p>\n<p><u>For assembling the pie:<\/u><\/p>\n<p>Preheat the oven to 180\u00b0C.<\/p>\n<p>Divide the dough into two portions, with one slightly larger than the other.<\/p>\n<p>Roll out the larger portion and line a round baking dish with it.<\/p>\n<p>Pour in the sausage filling and spread it evenly.<\/p>\n<p>Roll out the second piece of dough and place it over the filling.<\/p>\n<p>Brush the edges of the bottom pastry with the reserved beaten egg and press the top layer down, crimping the edges together to seal.<\/p>\n<p>Make three small slits in the centre of the pastry to allow steam to escape.<\/p>\n<p>Brush the top with the remaining beaten egg yolk.<\/p>\n<p>Bake in the preheated oven at 180\u00b0C for approximately 50
