{"id":2692,"date":"2025-01-31T10:03:32","date_gmt":"2025-01-31T10:03:32","guid":{"rendered":"https:\/\/paderis.gr\/?p=2692"},"modified":"2025-05-29T08:33:48","modified_gmt":"2025-05-29T06:33:48","slug":"glasarismeni-papia-me-koym-koyat-gourmet-tp-panteri-stithos-papias-psito-kapnisto","status":"publish","type":"post","link":"https:\/\/www.paderis.gr\/en\/glazed-duck-breast-with-kumquats-gourmet-pp-paderis-smoked-roasted-duck-breast\/","title":{"rendered":"Glazed Duck Breast with Kumquats \/ Gourmet \/ PP PADERIS\u2019 Smoked Roasted Duck Breast"},"content":{"rendered":"<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li>340g smoked roasted duck breast, thinly sliced<br \/>\n\u25cf Salt, to taste<br \/>\n\u25cf Freshly ground black pepper<br \/>\n\u25cf 2 tbsp olive oil<br \/>\n\u25cf 1 cup dry white wine<br \/>\n\u25cf 1 cup apricot jam<br \/>\n\u25cf 1 bay leaf<br \/>\n\u25cf 2 cinnamon sticks, broken in half<br \/>\n\u25cf 1 1\/3 cups kumquats, pitted and quartered<br \/>\n\u25cf 2 tsp Grand Marnier<\/li>\n<\/ul>\n<p><strong>METHOD:<\/strong><\/p>\n<p>Season the duck breasts with salt and pepper.<\/p>\n<p>Heat the olive oil in a large pan over medium-high heat.<\/p>\n<p>Reduce the heat and cook the duck breasts on both sides for about 10 minutes, until they are golden brown.<\/p>\n<p>Remove from the pan and set aside.<\/p>\n<p>In a saucepan, combine the white wine, apricot jam, bay leaf, and cinnamon sticks. Stir and cook over medium-high heat until it begins to boil.<\/p>\n<p>Add the kumquats, reduce the heat, and simmer for 15 minutes until the kumquats soften and the liquid begins to form a syrup.<\/p>\n<p>Remove from heat, add the Grand Marnier, stir, and season with salt and pepper.<\/p>\n<p>Strain the glaze into a small bowl, discarding the cinnamon and bay leaf.<\/p>\n<p>Set the glazed kumquats aside and keep the glaze separately.<\/p>\n<p>Brush the duck breasts with the glaze, garnish with glazed kumquats, and
