Zucchini Mini Pizzas with Mozzarella and Country Style Sausage / PP Paderis’ Country Style Tzoumagias Sausages
Ingredients:
- 2 large courgettes, sliced into 0.5 cm rounds
- Olive oil, for brushing
- Coarse salt, to taste
- Freshly ground black pepper, to taste
- ¼ cup marinara sauce
- ½ cup grated mozzarella
- ¼ cup country-style sausage, sliced
- ½ teaspoon Mediterranean herb mix
- Basil leaves, for garnish
Method:
Lightly brush both sides of the courgette slices with olive oil.
Season the courgettes with coarse salt and freshly ground black pepper.
Heat a grill pan over medium-high heat and cook the courgette slices for 2 minutes on each side.
Line a baking tray with parchment paper and place the grilled courgette slices on it.
Evenly spread marinara sauce, grated mozzarella, and country-style sausage slices over the courgette rounds.
Grill for approximately 1-3 minutes, until the cheese melts.
Remove the tray from the oven, sprinkle the mini pizzas with the Mediterranean herb mix, garnish with basil leaves, and serve warm.
