Sausage & Shrimp with Vegetables in Foil / PP PADERIS’ Beef Sausages

Ingredients:
- 680 g shrimp, peeled and deveined
- 360 g beef sausage, sliced
- 2 ears of corn, cut into 4 pieces
- 450 g baby potatoes, halved
- 2 tbsp olive oil
- 4 tsp Cajun seasoning mix
- Coarse salt
- Freshly ground black pepper, to taste
- 2 tbsp fresh parsley, finely chopped
Method:
Preheat the grill pan over high heat.
Cut 4 large sheets of aluminium foil, approximately 30 cm each.
Divide the shrimp, sausage, corn, and potatoes into 4 equal portions and place them in the centre of each foil sheet in a single layer.
Fold up the edges of the foil to create small packets.
Drizzle with olive oil, sprinkle with Cajun seasoning, season with salt and pepper, and gently shake the packets to mix the ingredients.
Seal the foil packets carefully, ensuring they are tightly closed.
Place the packets onto the grill and cook for 12-15 minutes.
Sprinkle with fresh parsley and serve immediately.
