Baked Eggs with Spicy Country Sausages & Olives / PP PADERI Spicy Country Sausages

Ingredients:

  • 1 tbsp olive oil
  • 1 large red onion, finely chopped
  • 1 red bell pepper, deseeded and sliced
  • 2 garlic cloves, crushed or finely chopped
  • 800 g canned chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 100 g spicy country sausage, sliced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 75 g black olives, pitted
  • 4 medium eggs
  • Fresh parsley, finely chopped

Method:

Preheat the oven to 200°C.
Heat the olive oil in an ovenproof non-stick frying pan.
Add the onion and sauté over medium heat for 4-5 minutes until softened.
Stir in the red pepper, garlic, and smoked paprika, and cook for another 2 minutes.
Add the chopped tomatoes, tomato paste, and spicy country sausage. Season with salt and pepper, then simmer over medium heat for 10-15 minutes until the mixture thickens.
Stir in the olives and mix well.
Taste and adjust seasoning if needed.
Using the back of a spoon, create 4 small wells in the mixture and crack an egg into each one.
Transfer the pan to the preheated oven and bake for 10 minutes, or until the egg whites are set but the yolks remain runny.
Sprinkle with fresh parsley and serve immediately.
