Savory Muffins with Pancetta, Graviera & Spring Onion / Gourmet / PP PADERIS’ Smoked Pork Pancetta with Spices

Ingredients:
- 360 g self-raising flour
- 1 tbsp sugar
- ½ tsp salt
- 100 ml vegetable oil
- 2 large eggs
- 300 ml buttermilk
- 100 g smoked pork pancetta with spices, diced
- 80 g aged graviera cheese, diced (+ extra grated for topping)
- 5 spring onions, sliced
Method:
Preheat the oven to 180°C.
Line a 12-cup muffin tin with paper cases.
Sift the flour, sugar, and salt into a large mixing bowl.
In a separate bowl, whisk together the oil, eggs, and buttermilk.
Pour the wet mixture into the dry ingredients and stir until just combined.
Gently fold in the smoked pancetta, diced graviera, and spring onions.
Divide the batter evenly among the 12 muffin cases.
Sprinkle with the extra grated graviera.
Bake for 18-20 minutes, until the muffins have risen and turned golden brown.
Allow to cool slightly before serving.
