Potato Salad with Paderis’ Apaki and Pickles / PP Paderis’ Apaki

INGREDIENTS:

  • 700g baby potatoes
    ● 1 sprig mint
    ● 150g Apaki Paderis, sliced into strips
    ● ½ cup mayonnaise
    ● 4 tsp mustard
    ● 4-5 pickled cucumbers, sliced into strips
    ● 4 radishes, sliced
    ● 2 small onions, sliced
    ● A bunch of parsley leaves

METHOD:

Boil the baby potatoes in lightly salted water with the mint sprig for 10-15 minutes, until tender.

Drain the potatoes and set them aside to cool in a large bowl.

In a non-stick frying pan, cook the Apaki Paderis until crispy.

Remove from the pan and add to the cooled potatoes.

In a small bowl, combine the mayonnaise, mustard, and pickled cucumbers. Mix well.

Add the radishes and onions to the potatoes.

Season with freshly ground black pepper and pour the mayonnaise mixture over the potatoes. Stir to combine.

Garnish with chopped parsley and serve.
