Smoked Roasted Turkey Breast “Spaghetti” with Basil Pesto and Almonds
Ingredients:
- 1 pack (500g) Paderi smoked roasted turkey breast slices
• 2 tsp basil pesto
• 50g kefalotyri cheese, shaved into flakes
• 5–6 cherry tomatoes, quartered
• 1 tbsp almonds
• Fresh mint leaves
Method:
Slice the Paderi smoked roasted turkey breast into thin strips to resemble “spaghetti”.
In a bowl, add 2 tablespoons of basil pesto and the turkey strips, and toss to coat well.
Using a pestle and mortar, lightly crush the almonds.
Arrange the turkey “spaghetti” with pesto on a plate. Scatter the crushed almonds over the top.
Add the quartered cherry tomatoes, sprinkle with the kefalotyri cheese flakes and garnish with fresh mint leaves.
Optionally, serve with a glass of red wine.
