Trachanotto with Country Style Karditsa Sausages and Caramelised Onions

Ingredients:

  • 190 g Country Style Karditsa Sausages (or half a package)
  • 1 cup sweet trachanas
  • 600 ml vegetable broth
  • ½ Florina pepper, diced
  • 2 tbsp olive oil
  • 2 small carrots, diced
  • 3 tbsp caramelised onions
  • Salt

Method:

Heat 2 tablespoons of olive oil in a pan and sauté the carrot and pepper for 3-4 minutes.

Add the trachanas and continue sauting for another 2 minutes.

Gradually pour in the broth, season with salt and stir continuously until the mixture thickens.

Meanwhile, heat another pan, slice the country style Karditsa sausages into rounds, and fry them for 2-3 minutes on each side.

Transfer the trachanotto to a plate, top with the sausages and add the caramelised onions.

Optionally, serve with grated graviera cheese.
