Flogeres with Country Style Tzoumagias Pork Sausages

Ingredients:

  • 4 Country Style Tzoumagias pork sausages by PADERIS BROS CO
  • 250g ready-made kouro pastry
  • 100g Camembert cheese
  • 50g cranberry jam
  • 2 large eggs
  • 8 fresh sage leaves
  • 2 tbsp toasted pine nuts
  • 1 tsp fleur de sel
  • 1/2 tsp black sesame seeds
  • 1 tsp flour

Method:

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.
  2. Cut each sausage in half.
  3. Lightly dust the work surface with flour. Roll out the kouro pastry and cut it into 4 equal portions.
  4. For each portion, place a slice of Camembert cheese, 1 tbsp of cranberry jam, 1/2 tsp of toasted pine nuts, 2 fresh sage leaves, and the halved sausage.
  5. Roll up each portion into a log shape and transfer them onto the prepared baking tray.
  6. Repeat the process for the remaining portions.
  7. In a small bowl, whisk the two eggs and brush the egg wash over the rolls.
  8. Sprinkle with fleur de sel and black sesame seeds.
  9. Bake in the preheated oven at 180°C for 12-15 minutes, until golden brown. Serve warm.
